The strascinati are a sort of orecchiette, but much larger and more open.
The name derives from the method with which the pasta is modeled, dragged (trascinata) along a large wooden surface with the fingers of the hand.
Our beloved strascinati are very appreciated by our customers. From restaurants to housewives, they represent a pleasant alternative to the usual formats.
We recommend them with ground sausage, mushrooms and provola.
